Olive oil must comply a certain number of physics-chemical parameters to allow labeling in EXTRA VIRGIN, VIRGIN or LAMPANTE (latest means forbidden for consumption in the EEC).
Regulation 2568/91 of July11, 1191, published in the Official Journal of the European Communities, gives the criteria that must be met (see diagram below).
A so-called “lampante” oil means that the oil is inappropriate as food.

The fatty acids composition (palmitic, linoleic, oleic, linolenic, etc) is also regulated by the 2568/91 rules. The analytical method involves the FAME procedure (Fatty Acid Methyl Ester). The analysis constitute an added value and can be indicated by labeling in the bottles.

Take 50 ml of oil in the bottle. Fill out the bottle and close with self-locking cap. Put in a safe parcels.
